When I think of BBQ, I think competition and secrecy. Everyone has a super undercover recipe for their BBQ sauce, the way they cook their ribs, how they get a certain cut of meat from a specific butcher, or how they skin the pig at just the right time. There’s all this mystery that goes on like a nuclear science experiment where everyone is afraid someone will steal their ultra complicated, unique recipe. But when you look at the ingredients list and there are only a few items on there, you feel cheated. Something so exquisitely delicious shouldn’t be so simplistic, right?

Surely the creator figured out that some underground root of a tree in Australia would be the secret to the food’s success and not just simple ingredients mixed together. However, some of the best recipes are made from just a few food items mixed in the right way.

With just eleven ingredients, you can enjoy KFC coleslaw in your very own home. You don’t have to go to a restaurant to get your fix and most of the ingredients are in your pantry or fridge already. This recipe is quick and easy to make for beginners and also stuns at any summer party. You can save money by making the KFC coleslaw yourself and still enjoy the crunchy, creamy dreaminess.

The carrot and onion are easy enough to chop but if you’re unsure about how to get the cabbage just right, purchase a veggie shredder. This helps to keep all the pieces in a plastic tub underneath the metal cutting utensil and it’s very easily to slide the cabbage over the shredder. I like to use my 8” chef’s knife because I enjoy chopping and dicing, and this works just as well, but if you’re looking for the fast method or the easy method, a veggie shredder will work wonders.

If you choose to use the chef’s knife method, it’ll take a little more time and energy but the results will be the same. Make sure you don’t completely dice or mince the cabbage though. You want to have large pieces like traditional coleslaw and not little tiny bits everywhere. Being gentle with the knife and only slightly chopping the head of cabbage will allow you to keep the pieces in the right proportion. I also like the clean up of the knife better than the shredder. I hate cleaning in-between all the tiny holes that the shredder has and the knife and cutting board are much simpler to clean. It all comes down to time and personal preference though which you end up using.

When it comes to copycat recipes, you can be sure everyone under the sun will try to make their own version whether it complies with the original or not. Especially for items like KFC coleslaw that’s well-known and adored, if you want to get the recipe that tastes exactly the same, you’ll have to make sure to use the right recipe.

One of the best copycat recipes for KFC coleslaw that I’ve found is from Food.com and can be found here. It’s the same recipe featured in this post and doesn’t use any added sugar, which I think vastly improves the taste. It tastes exactly like KFC’s coleslaw, which is what the ultimate goal is, and it doesn’t add anything extra that the recipe doesn’t need. A lot of the other recipes use the sugar to increase sweetness and cut the acidity of the slaw, however, this recipe uses buttermilk, milk, and mayo to accomplish the same task. Using these ingredients instead of sugar helps to add to the creaminess as well. Some recipes will also use milk or buttermilk but I think the creamy/crunchy flavor combo works best without the gritty sugar and with the delicious buttermilk.

Ingredients

  1. • 3 ¼ cups finely diced cabbage
  2. • 1/8 cup diced carrot
  3. • 1 TB (Tablespoon) minced onions
  4. • 1/8 cup granulated sugar
  5. • ¼ TS (Teaspoon) Kosher salt
  6. • ¼ TS pepper
  7. • 1/8 cup milk
  8. • ¼ cup mayo
  9. • 1/8 cup buttermilk
  10. • 5/8 TB white vinegar
  11. • 1 TB lemon juice

Instructions

  1. For the KFC Coleslaw: Dice the carrots and mince the onion and add to a large bowl. Add the sugar, salt, pepper, milk, mayo, buttermilk, white vinegar, and lemon juice to a food processor and mix until fully combined. Chop the cabbage and add it to a large bowl. Combine all ingredients and mix until fully combined. Refrigerate for 2-5 hours or overnight.
